What is the easiest way to go about being vegan?

I have a very busy lifestyle and I just don’t have time to make elaborate vegan meals. What are some easy meals I can make to ensure I am nutritionally sound?

  1. I’d make a stir fry of noodles, tofu, broccoli, carrots, mushrooms, peppers, soy sauce, rice wine vinegar, chillies, ginger and garlic. You may want to add a spoonful of ground flaxseed to your meals, it has lots of nutrients in.

  3. I’m vegan, and I never cook elaborate meals.

A lot of indian food is vegan and it’s easy to make.

Buy Boca fake-meat (the ground meat one) and put it in spagetti sauce, or cook it in a skillet with a little tomato sauce, ground cumin, and garlic, then wrap it in corn tortillas. Its tex mex taquitos turned vegan.

  4. Quick beans and rice:

1 bag instant brown rice (dry)
1 15 oz can black beans, rinsed and drained
1 15 oz can red kidney beans, rinsed and drained
    1 24 oz chunky salsa

Put all ingredients in a crock pot, cook on low until rice is done and beans are cooked or ~ 3 hours.

Quick to get together, makes a large portion for lunch on the go, and easy to add veggies, fruits, and crackers on the side.

Being vegan isn’t an extremely difficult thing to do. Just takes a little planning. :o)
